Do you think I’ll ever write a post NOT about a menu plan? Sometimes it seems like I’m so busy running here and there, in-town engagements, traveling out of town… I keep a running list of all of the things I want to write about, but I never get to it and then when I revisit my list some of the things are so outdated that I scratch them off and forget about them. What a bummer!
Anyway, here’s our menu plan for the upcoming week. It contains a few things that didn’t wind up on our plates last week and some favorites just to make busy days easier.
Monday, April 11:
Lunch — Egg salad sandwiches. I was making grand plans to take a big cobb salad to Cooking Club tonight, and got the eggs boiling but then decided to stay home and get some long-overdue chores done. So, what do you do with 7 boiled eggs? Make egg salad.
Dinner — Cheese enchiladas and brown rice.
Tuesday, April 12:
I’m going to try to head down to the drivers license office (again) to take the test for my motorcycle permit. I tried last week but their computers were down and I didn’t feel like waiting all day. Hopefully it’s fixed now. Remember when we took our permit tests on paper forms? Does anyone use those anymore?
Lunch — Tuna sandwiches.
Dinner — Homemade Hamburger Helper.
Wednesday, April 13:
Bible study in the morning. Love this class so much!
Lunch — Quesadillas.
Dinner — Monterey Chicken.
Week 4 of Laugh Your Way to a Better Marriage. We’re getting into the “nitty gritty” this week. I wish Jason was able to come along, but only a couple more weeks of night shift then he’ll be back to working days like normal folk.
Thursday, April 14:
Hooray for MOPS! I missed the last meeting three weeks ago, and the meeting before that was over a month ago. I’m looking forward to seeing everyone again (even though I see several of you at Bible study and playgroup).
Lunch — Ham or turkey sandwiches.
Dinner — Hamburger steaks, oven fries, and corn on the cob.
Friday, April 15:
Lunch — Payday! We’ll head over to Sam’s Club for our semimonthly shopping trip and have some hot dogs for lunch.
Dinner — Lemon Parmesan Pasta with chicken and bacon, crusty bread on the side with homemade garlic spread.
Saturday, April 16:
Either Jason or I will be taking the motorcycle safety class on base this weekend. He’s an experienced rider, but we’re still waiting to hear whether this class is open to spouses. I hope so!
Lunch — PB & J.
Dinner — Pot roast, mashed potatoes, and carrots. Maybe I’ll even get around to some homemade bread.
Sunday, April 17:
One of us will be at the motorcycle class and the other will be working in the nursery at church. We’ll see who does what! 🙂
Breakfast — Waffles (made on Saturday night, frozen, and toasted back up on Sunday morning).
Linner — Chili chicken (a new recipe, I’ll let you know how it turns out), rice, and seasoned corn.
Snack/Dessert — New York Cheesecake with cherry topping.
