Menu Plan: February 28, 2011

Another week has flown by and already it’s going to be March. Spring has sprung in Mobile and we are enjoying beautiful days with temps in the low 70s, blue skies, fluffy white clouds, and nice breezes. Sometimes we get a weird rainy day, but mostly winter is over and we’re loving it!

Tomorrow I will be shopping at a real commissary for the first time. We have a little bitty one here in Mobile, but it offers pretty much the same as a 7-11 does back home. It’s basically a Gas ‘n Go kind of place. My friend Hiedi is letting me tag along on one of her trips over to the big commissary in Biloxi. I’m excited! 🙂

Here’s what we’re having this week:

(There are a few repeats from last week because I played around with my menu each day. So, the things I didn’t get around to are popping up again on this week’s plan.)

Monday, February 28:
Lunch — Tuna sandwiches
Dinner — Cereal, sandwich, whatever you can scrounge. The boys and I are headed to Cooking Club.

Tuesday, March 1:
Playgroup, I’m not really sure where we’re meeting yet.
Lunch — Turkey sandwiches with veggies and ranch dip
Dinner — Lemon glazed chicken with veggie fried rice

Wednesday, March 2:
Bible Study at church.
Lunch — Grilled cheese sandwiches or PB&J with apple slices
Dinner — Crock pot pork chops, crash potatoes, carrots, and pineapple upside down cake.
Back to church for mid-week service.

Thursday, March 3:
Lunch — Macaroni and cheese
Dinner — Slow Cooked Beef Stroganoff with white rice and carrots

Friday, March 4:
Lunch — Chicken noodle soup and biscuits
Dinner — We’re going to play this by ear. Depending on what time my church ladies’ softball game is in the evening, we may have a quick dinner at home beforehand or pack some sandwiches and snacks to take to eat at the game.

Saturday, March 5:
Lunch — Tacos
Dinner — Balsamic Chicken with homemade rice-a-roni, corn on the cob, and chocolate cherry cobbler

Sunday, March 6:
Lunch — Corn dogs with apple slices
Dinner — Hamburgers, potato wedges, carrot sticks and ranch dip

I’m looking forward to this week. I did well and didn’t over-schedule us or commit to too much. Should be a good week with a handful of fun stuff to keep things interesting.
