Holy mackerel… it’s been over a month since I posted anything here.
To put it as simply as possible, things have been crazy around here lately. I’m pretty tired, worn out, more than a little cranky, and the crazy isn’t over yet. It’ll pass, but not for a while. As everyone says, we just have to take it one day at a time, or as Dory would say “Just keep swimming!”
One thing that never changes, I keep on meal planning. If I don’t, we wind up eating far too much take-out pizza, quesadillas, and tacos. Sometimes the best I can do is just do a few days so that we never have a “what are we eating?” kind of day, but most of the time I’m keeping up with planning a week in advance.
Here’s this week for us…
Monday, February 21:
Lunch — Leftovers, there was take-out pizza, homemade soup, and tuna salad available.
Dinner — Turkey Hot Browns (open-faced hot turkey sandwiches with bacon and cheese, YUM!), mashed potatoes, and corn on the cob
Tuesday, February 22:
Lunch — Tacos
Dinner — Lemon Pepper Chicken, brown rice, and carrots
Wednesday, February 23:
Lunch — Tuna Sandwiches
Dinner — Pot Roast, crash potatoes, peas & carrots
Thursday, February 24:
Lunch — Mac & cheese
Dinner — BBQ chicken, homemade rice-a-roni, and seasoned corn
Friday, February 25:
Lunch — Chicken fried rice
Dinner — Cheeseburger Soup and biscuits
Sunday, February 27:
Lunch — Turkey sandwiches
Dinner — Layered beef enchilada bake and Mexican rice, with a pineapple upside down cake for dessert. 🙂
For the first time in quite a while we are not over-booked this week. We have a few regular outings planned, like playgroup, bible study, and MOPS, but that’s all. I plan on taking some time this week to continue catching up on housework, doing some homeschooling with Jeremy (we had taken a break for a couple weeks because things were really out-of-hand around here), and doing some more upkeep on this blog. After getting it un-hacked a month ago I made sure it was functional, but I still haven’t gotten it looking nice again.
