Menu Plan: Back in the Swing of Things

It certainly does not feel like the beginning of a new week yet. Since we got home from vacation crazy early on a Wednesday morning, Thursday felt like Monday causing the tail end of last week and the weekend to feel weird.

Anyhow, this week I’ve be getting back into the swing of things here at home, starting with a good meal plan…

Monday, January 10:

Lunch — Turkey melts and apple slices.
Dinner — Meatloaf, mashed potatoes, and corn.

Tuesday, January 11:

Lunch — Fend for yourself! I’ll be at the hairdresser getting a new ‘do as an early birthday present to myself, so Jason will be figuring out what to feed Frank, Jesse, and himself. 🙂
Dinner — Lemon pepper chicken, white rice, and carrots.

Wednesday, January 12: My birthday!

Lunch — Cheeseburger soup.
Dinner — Thai chicken, veggie rice, cupcakes.

Thursday, January 13:

Lunch — Pizza.
Dinner — Shake & bake chicken, mashed potatoes, corn, and warm apples.

Friday, January 14:

Lunch — Turkey sandwiches with chips and dip.
Dinner — Hamburger Helper and salad.

Saturday, January 15: Jeremy comes home!

Breakfast — Cereal and fruit.
Lunch — Mac & cheese.
Dinner — Out to eat with a gift certificate from (purchased with free Swagbucks).

Sunday, January 16:

Breakfast — Pancakes with bacon or sausage.
Lunch — Grilling out with burgers, dogs, fries and carrots with ranch dip. (Jeremy’s current favorite meal.)
Dinner — Citrus chicken (using a really tasty fajitas marinade), rice, and corn on the cob.

Have a great week everyone, I know I will! My big boy is coming home and it’s my birthday. It couldn’t possibly get any better!
