Menu Plan: After a Long Vacation

I’m so tired! Jason and I drove for 37 hours and finally got home with Jesse and Uncle Frank this morning at 5 am. I’ve got to say, I wasn’t really in the mood to plan meals and grocery shop after getting scarcely 4 hours of sleep this morning, but just take a look at the state my refrigerator was in after 3 long weeks of us being away:

There is hardly anything in there! I don’t know about you, but around my house condiments do not a meal make.

Fortunately for our budget, my pantry was still well-stocked:

After a good couple of shopping trips to Sam’s Club and Wal-Mart, and $185 later, we’re now all stocked up with meat, chicken, milk, eggs, butter, veggies, fruit… pretty much everything.

That’s better! Now I can figure out what we’re eating this week…

Wednesday, January 5:
Lunch — We had a variety of hot dogs and soft pretzels at Sam’s Club.
Dinner — Jambalaya and cornbread muffins. I haven’t made jambalaya in years and have really been craving it lately. The spicy Cajun style stew came out wonderfully and I mixed up a new corn muffin recipe that for once didn’t dry out. I’ll share both recipes tomorrow!

Thursday, January 6:
Lunch — Tuna sandwiches and sliced apples.
Dinner — One-Pot Pasta and buttery garlic rolls.

Friday, January 7:
Lunch — Balsamic Chicken, roasted potatoes, carrots, and leftover rolls.
Dinner — Fried rice with veggies and eggs, followed by buttermilk cake with lemon curd filling (Jason’s been asking for it for over a month now).

Saturday, January 8:
Lunch — Tacos and apple slices.
Dinner — Monterey Chicken in the crock pot with a repeat performance of my tasty new corn muffins.

Sunday, January 9:
Lunch — Something simple like mac & cheese or grilled cheese and turkey sandwiches after church.
Dinner — Meatloaf, mashed potatoes, and corn.

I went easy on myself this week by planning meals that I have nearly memorized because we’re going to be busy unpacking all of our suitcases, putting away lots of new toys that the boys received for Christmas, clearing out old toys to either pack away or donate, clearing out a bunch of clutter (most of it is localized to the dining room, the table tends to be the household dumping ground), and otherwise preparing for Jeremy to come home next weekend. So excited! I also have lots of blogging to catch up on, and a knitting project that I started almost a week ago and sadly wasn’t able to work on while we drove across the country.
