I was searching my brain for an easy side dish to go with our pork roast last night and didn’t want the usual fallback of mashed potatoes or Minute Rice. I had a little bit of rotini pasta left in the box – not enough for a main dish for five people, but enough for a side dish. Think, think, think… and make it quick…
2 cups Rotini (spiral) pasta
1/4 cup butter
1/4 cup olive oil
4 garlic cloves, minced
1/4 cup lemon juice
1/2 cup grated parmesan cheese
1. Cook the pasta in salted water and drain. Set aside.
2. Melt the butter in a skillet, add the olive oil and garlic. Saute over medium heat until browned. Lower heat.
3. Add the pasta to the skillet and pour in lemon juice.
4. Stir in the parmesan until melted. Serve immediately (if it sits for more than a couple minutes it gets a little dry).
We really liked this. It was a simple “throw in a few ingredients that go well together” kind of dish. I really love how butter and olive oil tastes in the same dish, but you could use all of one or the other if you’d rather. A winning feature was how the pasta took on just a little bit of a crisp from the hot skillet. Very tasty. It really complimented the pork roast, but it’d definitely taste good with anything.
